Oatmeal Coconut Squares with Chocolate Chips
Makes 16 Bars
- 1 Cup old-fashioned rolled oats
- 1/2 cup all-purpose flour
- 1/2 cup packed dark brown sugar
- 1/2 cup dark chocolate chips
- 1/2 cup sweetened coconut chips ( you can use unsweetened as well )
- 1/4 teaspoon baking powder
- 1/4 teaspoon salt
- 5 Tablespoons unsalted butter, melted and cooled
- 1 large egg
- 1/2 teaspoon vanilla
Line a 9" pan metal baking pan with foil and butter the foil in the pan.
Toss together oats, flour, sugar, chips, coconut, baking powder and salt in a large bowl.
Beat together eggs and vanilla with a fork in another bowl, then stir into the oat mixture until incorporated.
Spoon into baking pan, patting evenly.
Bake in middle of oven until set, about 25 minutes. Remove from pan by lifting foil, cool on rack, peel back the foil and cut into 16 squares.
